Udon and Extra Spicy Tan Tan Men

Every now and then, when i want udon, nothing else will do. That silky texture has gotten me orally fixated! Also i've come to the conclusion that i prefer fresh shiitake to its dried form which seems to be more popular among the Chinese. I never even knew one could get it fresh! It may be less deep with umami, but i dig the tenderness and bigger size.

Another first. Definitely different than the Chinese version of Dan Dan. This bowl happened to be on the salty side, but i still enjoyed tremendously the complex broth and the unique combo of ingredients which came together like a symphony of flavors.
