These seem to me glazed with honey (among other things) and roasted like the Cantonese do their "barbecue pork" known as Cha Siu 叉燒 which literally means "fork-roasting" as they slow-roast the meat over fire for hours while continuing to brush with more glaze, resulting in a flavorful, tender piece. I've never seen this done on chicken but it tasted fine and let's face it, i'll eat anything!
