Melanzane alla Parmigiana

Eggplant Parmesan, one of my faves.

I did not make this. A.G. Ferrari did. But sticking it in the oven counts, no?

The layers are simply lovely.

Such a flavorful dance in your mouth! And I adore the texture of cooked eggplant.

I had trouble scooping out an intact chunk at first. Still looks amazing in my opinion.

Second attempt was better.

Yes, once again, it is food porn for me.
