The significance lies in that i've come a long way since the "instant" version. It was one guilty pleasure but, as i would later discover, there is, like, 28g of fat in one serving. And a shallow plastic dishful contains two servings! Yikes! Those were the years of not caring what went in my body and certainly not reading labels. Also couldn't resist the convenience of "ready in 3 minutes". And all you have to do is pour in hot water! The Japanese are genius.
Turns out this dish, originally street food, is the simplest of recipes. It's mostly soy and sesame oil. No mystery to it. In this instant i did cheat and bought noodles that came with seasoning packets. But it's good to have options.
After a long ride having reached the austere end of my diet spectrum, here i am, at a happy medium, no longer afraid of oil, using just enough for flavor and to satiate. Quite a journey it was.
